What is the problem of butyric contamination in the cheese industry?

Butyric contamination causes swelling in cheeses, which forces them to be discarded or reused, causing serious economic damage.

It's not just that you have to throw it away, it's that disposing of it has very high costs.

What can be done to prevent bloating?

Currently, bactofugators are used to help reduce the butyric load, but it is a mechanical system and tends to fail a lot. Moreover, it is of little use if you don't know what the actual number of butyric spores is.
